This recipe was inspired by my avocado toast with tomato recipe. I love pairing tomato and avoado together but adding cottage cheese is a total game changer!

Ingredients for Avocado Toast With Cottage Cheese
1 piece of toast
You can use whatever bread is your favorite. I prefer thin, whole grain bread but any type will work.
2 heaping tsp of cottage cheese
Small curd cottage cheese will spread the best on toast but you can use traditional cottage cheese as well.
1/2 sliced avocado
For this avocado toast recipe, we’re not going to mash the avocado because the cottage cheese is already spread on the bread. Instead, we’re going to slice the avocado.
1/2 tomato, sliced
I would recommend using a Roma or Beefsteak tomato because those are the two largest, sweetest, and juiciest tomatoes. They’ll add the most flavor to this toast recipe.
Salt and pepper, to taste
You can add salt and pepper to your avocado and cottage cheese toast whenever you’d like. I suggest adding salt and pepper to the cottage cheese or on top of the toast after it’s done.
Instructions
Step 1: Spread cottage cheese evenly on the toast.
Step 2: Add sliced avocado to the cottage cheese. Leaving space between slices.
Step 3: Top with sliced tomatoes, spreading them out on top of the toast.
Step 4: Add salt and pepper if desired.
Hint: It’s best to use an avocado that’s ripe, but not too ripe. In this avocado toast with cottage cheese recipe, you’re slicing the avocado instead of mashing it. You can be more lenient with the avocado ripeness when you’re mashing it, but when you’re slicing it, you need to make sure you have a good and ripe avocado.
