Scrambled eggs are a classic breakfast recipe that everyone loves. But… avocado and scrambled eggs on toast is a filling, savory, and delicious recipe that you’re going to love even more than plain old scrambled eggs.
I find myself making eggs for myself and my family during the weekends. The kids aren’t rushing for school, I have more time, and eggs always sound yummy on a Sunday morning! Even though my kids still prefer regular scrambled eggs, I top mine on avocado toast for a healthy and filling breakfast!
This avocado toast recipe is very similar to my Chorizo and egg avocado toast recipe and my avocado toast with arugula recipe. I love topping avocado toast with some type of egg because it adds texture, protein, and nutrients.

Ingredients Checklist

Instructions
Step 1: Toast slice of bread
Step 2: Mash avocado in bowl and mix in salt and pepper if desired
Step 3: Spread mashed avocado on toast
Step 4: Melt butter (if desired) in a frying pan
Step 5: Crack the egg and pour it into a small bowl. Whisk with a fork until evenly scrambled
Step 6: Fry scrambled egg in a frying pan, in melted butter, for 1-2 minutes until fluffy.
Step 7: Place cooked egg on top of bread and avocado.
Step 8: If desired, drizzle with hot sauce
Hint: If you’d rather not use butter to cook your egg, feel free to use olive oil or a nonstick pan to cook your scrambled egg.
Substitutions
If you’re looking to up your protein intake or you avoid gluten, there are simple substitutions you can make to fit your needs.
- Protein – If you want to pack this recipe with protein, you can cook 3/4 cup of egg whites instead of 1 whole egg. One egg contains 6 grams of protein while 3/4 cup of egg whites contains 20g of protein.
- Bread – use a slice of gluten-free bread instead of white bread or multigrain bread. Gluten-free bread can be found at most grocery stores and it’s sometimes in the freezer aisle.

Variations
To spice up your avocado and scrambled egg toast, you can do a number of things to add more flavor, texture, spice, etc.
- Meat – Add crispy bacon, sausage, or even ham on top of this toast for some extra protein and flavor. Avocado toast with scrambled egg and bacon would be to-die-for!
- Veggies – Bell peppers, carrots, radishes, onions, tomatoes, and other vegetables would go great with this recipe. I think scrambled eggs with avocado and tomato are so refreshing during summertime.
- Cheesy – Scrambled eggs with avocado and cheese sounds heavenly. Melted cheddar cheese topped on the scrambled eggs would be the perfect way to add extra flavor to this recipe!
Avocado toast with arugula is very similar to this recipe, but the egg is cooked over-easy instead of scrambled.
Are eggs and avocados good for weight loss?
Eggs and avocados are both filled with healthy fats. Healthy fats help aid in weight loss by keeping you satisfied and full for a long period of time. Although there aren’t specific foods that contribute to weight loss, eating balanced meals (like this recipe!) that contain a source of carbs, protein, and fat can help you reach your weight loss goals. Ingredients
- 1 slice Bread
- 1 large Egg
- 1/2 Avocado mashed
- 1/2 tbsp Butter if desired
- Hot sauce if desired
- Salt and pepper if desired
Instructions
