Scrambled eggs are a classic breakfast recipe that everyone loves. But... avocado and scrambled eggs on toast is a filling, savory, and delicious recipe that you're going to love even more than plain old scrambled eggs.
Mash avocado in a bowl and mix in salt and pepper if desired.
Spread mashed avocado on toast.
Melt butter (if desired) in a frying pan.
Crack the egg and pour into small bowl. Whisk with a fork until evenly scrambled.
Fry scrambled egg in a frying pan, in melted butter, for 1-2 minutes until fluffy.
Place cooked egg on top of bread and avocado.
If desired, drizzle with hot sauce.

Variations
To spice up your avocado and scrambled egg toast, you can do a number of things to add more flavor, texture, spice, etc.
Meat - Add crispy bacon, sausage, or even ham on top of this toast for some extra protein and flavor. Avocado toast with scrambled egg and bacon would be to-die-for!
Veggies - Bell peppers, carrots, radishes, onions, tomatoes, and other vegetables would go great with this recipe. I think scrambled eggs with avocado and tomato are so refreshing during summertime.
Cheesy - Scrambled eggs with avocado and cheese sounds heavenly. Melted cheddar cheese topped on the scrambled eggs would be the perfect way to add extra flavor to this recipe!
Avocado toast with arugula is very similar to this recipe, but the egg is cooked over-easy instead of scrambled.
