Serve up this pesto avocado toast for brunch or breakfast! It can be as simple as using mashed avocado (or your favorite guacamole recipe) and jarred pesto!

  • 1 slice bread toast
  • 1/2 avocado
  • 1/2 tsp pesto
  • grated parmesan if desired

  • Toast slice of bread
  • Mix together the avocado and pesto in small bowl
  • Sad avocado mixture on top of toast
  • Top with grated parmesan if desired, or additional topping ideas given below.

Additional Topping Ideas:
  • Add shredded cheese on top - parmesan, mozzarella, etc.
  • Eggs are great - scrambled, fried, hard boiled.
