- 1/2 avocado
- 1 egg over easy (optional)
- Pinch arugula
- salt and pepper (optional)
If an egg is desired, cook over easy, over medium, or over hard egg.
Toast a slice of bread.
Mash 1/2 avocado and add salt and pepper if desired.
Spread mashed avocado over toasted bread.
Top with egg.
Top with arugula.
Serve!
