This crispy toast topped with a spread of savory avocado and healthy arugula makes such a satisfying breakfast, lunch, or brunch!
Avocado toast is especially delicious on a hot summer day but it can (and should!) be enjoyed year round. It’s light, refreshing, and packed with nutrients.
This yummy avocado toast with arugula was inspired by my sriracha avocado toast recipe and it pairs well with this hot and delicious sausage breakfast casserole. There’s nothing better than starting your day with a healthy and filling breakfast!

Ingredients needed for avocado toast with arugula
Toasted Bread
You can use any type of bread you’d like for this avocado toast recipe. Multigrain, white, sourdough, rye, etc. – take your pick.
1/2 avocado
A ripe avocado will be the easiest to mash and have the best flavor.
1 over easy egg (if desired)
Go ahead and top your toast with an over easy egg for extra flavor, texture, and protein.
Pinch of arugula
Arugula has a peppery and lightly spicy taste that pairs perfectly with avocado.
Salt and pepper if desired
Salt and pepper are simple spices that you can add to taste before diving into your toast.
Instructions
Step 1: If an egg is desired, cook over easy, over medium, or over hard egg
Step 2: Toast slice of bread
Step 3: Mash 1/2 avocado and add salt and pepper if desired
Step 4: Spread mashed avocado over toasted bread
Step 5: Top with egg
Step 6: Top with arugula and serve!
Hint: When cooking an over-easy egg, it’s best to cook with a lid on the pan. This helps the egg whites cook faster while the yolk stays runny!
Substitutions
If you follow a gluten-free or vegan diet, there are substitutions for you!
- Gluten-Free – To make this recipe gluten-free, you can use gluten-free bread!
- Vegan – Skip the over-easy egg if you’d like your avocado toast with arugula to be vegan.
Almost all of my avocado toast recipes can be made gluten-free and my avocado toast with tomato is another great vegan option!
More topping ideas
If you’re feeling crazy, feel free to follow any of these variations to add more spice, flavor, or texture!
- ETBT – Everything but the bagel seasoning is delicious on avocado toast. Feel free to sprinkle some on top before serving.
- Spinach – If you like greens like me, feel free to add spinach along with arugula.
- Hot Sauce – The easiest way to add an extra kick to this toast is to throw some hot sauce on top!

Top tip
It can be tricky to time the ripeness of avocados! To prolong their “life” you can keep them in the refrigerator. This will slow the speed at which they ripen so they will keep for longer. If you want your avocado to ripen faster, keep it on the counter with other fruits.
