Avocado toast with bacon and egg, a satisfying, easy and FILLING breakfast or lunch idea that will help curb cravings!
Am I the only one who finds themselves cooking bacon and eggs on the weekend? The smell of bacon runs through my house on Saturday mornings and it’s so yummy to top on avocado toast.
This toast was inspired by my avocado toast with bacon recipe, and I follow this air fryer bacon recipe to cook my bacon to perfection every time!

Ingredients
1/2 large avocado
If you’d rather use one small avocado for this recipe, that will work too. It’s also best to make sure your avocado is ripe but not too ripe for this bacon and egg toast recipe!
1 pc. bread
You can use any type of bread you’d like. Bread made from real ingredients and high in fiber is going to be the best for you!
1 pc cooked bacon
You can cook your bacon however you’d like but I think crispy bacon is best for this recipe. To make perfectly crispy bacon, check out this air fryer bacon recipe!
1 egg, cooked as desired.
I prefer my eggs over easy, but you can cook your egg however you desire. Scroll down on this post to see different ways to cook eggs.
Salt and pepper (optional)
Topping your toast with salt and pepper is completely optional but it does add some extra flavor. You could also add salt and pepper to your avocado while mashing.
Garlic powder (optional)
Same with salt and pepper, you can add garlic powder on top of your bacon, egg, and avocado toast after it’s prepared or while mashing the avocado.
Instructions
Step 1: Cook bacon as desired. Follow this recipe for crispy air fried bacon.
Step 2: Cook your egg as desired.
Step 3: Toast slice of bread.
Step 4: Mash avocado and add salt, pepper, or garlic if desired.
Step 5: Chop bacon into small strips.
Step 6: Spread avocado onto toast, top with egg and bacon.
Step 7: Add more salt and pepper if desired.
Helpful Hint: If you cook your egg with the stove lid on, it will be easier to achieve the over easy style. But make sure you don’t forget about it!
Substitutions
It’s so easy to switch up this recipe to fit almost any dietary need. Low-carb, lower-calorie, gluten-free, etc.
- Low-carb – If you’re on a low-carb diet, you can make this avocado bacon egg toast with low-carb bread. Additionally, low-carb bread can be found at most grocery stores in the bread aisle or the health section.
- Lower calorie – If you’re trying to lose weight, avocado toast can be a great tool! But, the bacon in this recipe is not the best for weight loss. For a healthier option, you can opt for turkey bacon and use this air fryer bacon recipe to cook!
- Gluten-free – Is it just me or has it been so much easier to find gluten-free products at the store nowadays! To make this recipe gluten-free, you can use gluten-free bread.

Variations
A great thing about this bacon and egg avocado toast is that you can LOAD it with tons of extra toppings!
- Spicy – Top with hot sauce, siracha, hot honey, or red pepper flakes.
- Veggie – Tomatoes, bell peppers, or mushrooms would taste amazing paired with bacon and egg!
- Greens – Add spinach or arugula for extra volume, flavor, and nutrients. Don’t forget to check out this avocado toast with arugula if you like your greens.
Different ways to cook eggs
Eggs taste great on avocado toast any way they’re cooked. Feel free to cook your egg a different way if over easy isn’t your favorite.
- Scrambled – Easy, simple, classic, and delicious. The egg is whipped before cooking.
- Over Easy – A fried egg and the egg is flipped while cooking but the yolk is still runny.
- Sunny Side – A fried egg with the yolk up and the egg is not flipped when cooking.
- Over Medium – A fried egg that’s flipped while cooking and the yolk is only partly runny.
- Over Well – A fried egg that’s flipped while cooking and the yolk is fully cooked.
Which bread makes the best toast?
Tender and buttery bread like brioche cannot take heat very well. It’s best to use dense and moist whole grain bread for the crispy toasting. In fact, day-old bread toasts terrifically!

Ingredients
- 1/2 large avocado
- 1 slice bread
- 1 piece cooked bacon
- 1 egg
- salt and pepper optional
- garlic powder optional
- chopped parsley, arugula, etc. optional as a garnish
Instructions
